·         1 cup basmati rice (rinsed and soaked for 30 minutes)

·         2 green chilies, slit lengthwise (adjust for spice preference)

·         2 cloves garlic, minced

·         1-inch ginger, minced

·         1 teaspoon cumin seeds

·         1 bay leaf

·         2 cloves

·         1 black cardamom pod

·         1/2 teaspoon turmeric powder

·         1 teaspoon ground coriander

·         1/2 teaspoon garam masala

·         Salt to taste

·         1/4 cup chopped fresh cilantro (coriander leaves) for garnish (optional) 


Cooking Process:

·   Prepare the Spinach: Wash and roughly chop the spinach leaves. In a blender or food processor, grind the spinach with a little water to create a smooth puree.

·     Temper the Tadka: Heat ghee or oil in a pressure cooker or pot. Add cumin seeds, bay leaf, cloves, and cardamom pod. Let them splutter for a few seconds.

·      Sauté the Aromatics: Add the sliced onions and green chilies. Sauté until the onions become translucent.

·     Spice Up the Base: Add ginger, garlic, and turmeric powder. Cook for a minute, releasing the fragrant aromas.

·     Incorporate the Spinach Puree: Pour the prepared spinach puree and cook for 5-7 minutes, stirring occasionally, until the raw spinach flavor disappears.

·     Spice it Right: Add coriander powder and garam masala. Season with salt to taste.

·    Cook the Rice: Add the soaked and drained basmati rice to the pot. Stir gently to combine with the masala.

·  Pressure Cook (Optional): Add enough water to cover the rice by about an inch. If using a pressure cooker, close the lid securely and cook for 3-4 whistles on medium heat. Let the pressure release naturally for 5 minutes before opening the lid.

·  Stovetop Method: If using a pot on the stovetop, bring the water to a boil, then reduce heat and simmer for 15-20 minutes, or until the rice is cooked and fluffy.

·   Garnish and Serve: Fluff the rice with a fork and garnish with chopped fresh cilantro (optional). Serve hot with raita or your favorite vegan side dish.
