·         1 tsp Cumin Seeds

·         1 medium Onion (finely chopped)

·         2 Green Chillies (slit lengthwise, optional)

·         1 inch Ginger (grated)

·         2 cloves Garlic (minced)

·         ½ tsp Turmeric Powder

·         1 tsp Coriander Powder

·         ½ tsp Garam Masala Powder

·         1 cup Fresh Fenugreek Leaves (washed and chopped)

·         1 ½ cups Water (or Vegetable Stock for extra flavor)

·         Salt to taste

·         Fresh Cilantro (chopped, for garnish)

Cooking Process:

·       Heat ghee/oil in a pressure cooker or pot with a heavy bottom. Add cumin seeds and let them splutter.

·    Sauté onions until translucent. Add green chilies (if using), ginger, and garlic, and cook for another minute.

·   Stir in turmeric, coriander powder, and garam masala, letting the aroma bloom for a few seconds.

·        Add rinsed rice and fry for a minute. Pour in water/stock and salt.

·      If using a pressure cooker, cook for 2 whistles on medium heat. For a pot, cook covered on low heat until rice is fluffy and water is absorbed.

·     Once cooked, gently fold in chopped fenugreek leaves. Let it stand covered for 5 minutes to allow the flavors to meld.

·       Garnish with fresh cilantro and serve hot.

Tips for a Triumphant Methi Pulao

·       Fresh is best: Use fresh fenugreek leaves for the most vibrant flavor. If unavailable, substitute 1 tablespoon of dried fenugreek leaves (kasuri methi) soaked in warm water for 15 minutes.

·      The art of layering: Don't overcook the fenugreek leaves. Add them towards the end to retain their bright, fresh taste and maximize their nutritional value.

·       Ghee vs. Oil: Ghee adds a richer flavor, but vegetable oil offers a lighter alternative.

·       Spice it up!: Feel free to adjust the amount of chili powder to suit your spice preference.

·    Leftovers delight: Methi Pulao tastes even better the next day, making it perfect for meal prepping.
