Ingredients:

·         1 cup Basmati Rice (rinsed)

·         1 medium head Broccoli, cut into florets

·         1 cup grated Cheddar Cheese (or your favorite vegetarian cheese)

·         1 tbsp. Ghee or vegetable oil

·         1 medium Onion, finely chopped

·         1 inch Ginger, grated

·         2 Green Chilies, chopped (adjust as per spice preference)

·         1 tsp Cumin Seeds

·         1 Bay Leaf

·         2 Cloves

·         1 tsp Coriander Powder

·         1/2 tsp Garam Masala Powder

·         1/2 tsp Turmeric Powder

·         Salt to taste

·         Chopped fresh Cilantro for garnish (optional) 


Cooking Process:

1.    Prepare the Rice: Rinse the Basmati rice thoroughly in cold water until the water runs clear. Soak the rice for 30 minutes.

2.    Sauté the Aromatics: Heat ghee or oil in a pressure cooker or pot with a heavy bottom. Add cumin seeds, bay leaf, and cloves. Once they splutter, add the chopped onions and cook until translucent.

3.    Add Ginger and Green Chilies: Stir in the grated ginger and chopped green chilies. Sauté for a minute, releasing their fragrant aroma.

4.    Spice it Up: Add coriander powder, garam masala powder, and turmeric powder. Fry for a few seconds, coating the onions and spices.

5.    Broccoli Time: Add the broccoli florets and cook for a couple of minutes until they become slightly tender-crisp.

6.    Rice and Water: Add the soaked and drained Basmati rice to the pot. Pour in enough water to cover the rice with an extra inch of water. Season with salt.

7.    Pressure Cook (Optional): If using a pressure cooker, close the lid and cook for 2 whistles on medium heat. Let the pressure release naturally for 10 minutes before opening.

8.    Stovetop Method: If using a pot, bring the water to a boil, then reduce heat and simmer for 15-20 minutes, or until the rice is cooked and fluffy.

9.    Cheese Power! Once the rice is cooked, remove from heat and gently stir in the grated cheese. Allow the residual heat to melt the cheese and create a creamy consistency.

10. Garnish and Serve: Fluff the rice with a fork and garnish with chopped fresh cilantro (optional). Serve hot with your favorite raita or poppadum.
