It's a celebration of plant-based cooking, brimming with health benefits and fostering a more sustainable approach to food.

Ingredients:

·         1.5 cups Basmati rice (rinsed and soaked for 30 minutes)

·         3 tbsp Ghee or vegetable oil

·         1 bay leaf

·         2 cloves

·         2 green cardamoms (black cardamom optional)

·         1-inch cinnamon stick

·         1 tsp shah jeera (black cumin seeds)

·         1 onion, thinly sliced

·         3 tsp ginger-garlic paste

·         1 green chili, chopped (optional)

·         1/2 tsp turmeric powder

·         1/2 tsp red chili powder (adjust to spice preference)

·         1/2 tsp garam masala powder

·         1 cup chopped mixed vegetables (carrots, peas, beans, cauliflower, etc.)

·         1/4 cup chopped coriander leaves

·         1/4 cup chopped mint leaves

·         Salt to taste

·         1/4 cup cashews and raisins (fried golden brown, optional)

Cooking Process:

·   Heat ghee/oil in a pressure cooker/heavy-bottomed pan. Add bay leaf, cloves, cardamom, cinnamon, and shah jeera. Let them crackle for a few seconds.

·   Add the sliced onions and cook until golden brown.

·   Stir in ginger-garlic paste and green chili (if using). Cook until fragrant.

·   Add turmeric, red chili powder, and garam masala. Sauté for a minute.

·   Add the chopped vegetables and cook for 2-3 minutes, stirring occasionally.

·   Add the soaked basmati rice, salt, coriander leaves, and mint leaves. Gently mix everything.

·   If using a pressure cooker, add enough water to cover the rice by 1 inch. Close the lid and cook for 2 whistles on medium heat. Let the pressure release naturally for 10 minutes before opening.

·   For a pan method, add about 2.5 cups of water (adjust depending on your pan). Bring to a boil, then reduce heat to low, cover the pan tightly, and cook for 15-20 minutes, or until the rice is cooked through and fluffy.

·  Once cooked, fluff the rice gently with a fork. Garnish with fried cashews and raisins (optional) and serve hot.

Tips:

·  For a richer flavor, soak the basmati rice in water with a pinch of saffron for 30 minutes before cooking.

·  Adjust the vegetables to your preference. You can also add chopped tofu or paneer for a protein boost.

·  Leftovers store well in the refrigerator for up to 3 days. Reheat gently in a pan or microwave.
