·         1/2 teaspoon turmeric powder

·         1/2 teaspoon red chili powder (adjust to spice preference)

·         1/2 teaspoon garam masala powder

·         Salt to taste

·         1 1/2 cups vegetable stock or water

·         Chopped fresh coriander leaves for garnish (optional) 



Cooking Process:

1.    Heat ghee or oil in a pressure cooker or pot. Add bay leaf, cloves, cinnamon, cardamoms, and cumin seeds. Let them splutter for a few seconds.

2.    Add the chopped onion and cook until translucent.

3.    Add ginger-garlic paste and cook for another minute.

4.    Stir in the chopped vegetables and dates. Sauté for 2-3 minutes.

5.    Add turmeric, chili powder, garam masala, and salt. Mix well.

6.    Add the drained rice and vegetable stock/water. Stir gently.

7.    (For pressure cooker): Close the lid and cook for 2 whistles on medium heat. Let the pressure release naturally for 10 minutes before opening.

8.    (For pot): Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until rice is cooked through.

9.    Fluff the rice with a fork and garnish with fresh coriander leaves (optional).
