Ingredients:

·         2 cups Basmati rice

·         2 cups chopped raw jackfruit

·         1 medium onion, sliced

·         2 cloves garlic, minced

·         1 inch ginger, minced

·         2 green chilies, chopped (adjust for spice preference)

·         1 medium tomato, chopped

·         1 tsp garam masala powder

·         1 tsp coriander powder

·         1/2 tsp cumin powder

·         1/2 tsp turmeric powder

·         1/4 tsp red chili powder (adjust for spice preference)

·         1/4 cup chopped cilantro

·         2 tbsp. vegetable oil

·         1 tsp salt (or to taste)

·         2 cups water  


Cooking Process:

1.    Soak the Rice: Rinse the basmati rice thoroughly and soak it in water for 30 minutes. This helps the rice cook fluffy and separate.

2.    Prepare the Jackfruit: While the rice soaks, cut the jackfruit into bite-sized pieces. You can either boil the jackfruit in salted water for 10 minutes to soften it slightly, or pan-fry it in a little oil until golden brown.

3.    Sauté the Aromatics: Heat oil in a pan or pressure cooker. Add the cumin seeds and let them sizzle. Then, add the chopped onions and cook until softened.

4.    Spice Up the Mix: Add the ginger, garlic, and green chilies. Sauté for another minute until fragrant.

5.    Introduce the Masala: Stir in the garam masala, coriander powder, cumin powder, turmeric powder, and red chili powder. Cook for a further minute, allowing the spices to release their aroma.

8.    Seasoning & Rice: Season with salt to taste. Add the soaked and drained rice to the pan along with water.

9.    Cooking the Pulao: If using a pan, bring the mixture to a boil, then reduce heat, cover the pan, and simmer for 15-20 minutes, or until the rice is cooked and fluffy. For a pressure cooker method, follow the manufacturer's instructions for cooking rice.

10. Finishing Touches: Once the rice is cooked and fluffy, turn off the heat and let it sit covered for 5 minutes. Garnish with chopped cilantro and serve hot. 


Tips:

·         For a richer flavor, use ghee instead of vegetable oil.

·         If you don't have garam masala, you can substitute with a combination of ground coriander, cumin, cloves, cinnamon, and black pepper.
