·        1 cup Basmati Rice (rinsed and soaked)

·        1 tbsp. Ghee or Vegetable Oil

·        1 tsp Cumin Seeds

·        2 Black Cardamoms

·        3 Cloves

·        1 Bay Leaf

·        1 medium Onion (finely chopped)

·        1 inch Ginger-Garlic Paste

·        1 Green Chili (slit, optional)

·        1 cup chopped Mixed Vegetables (carrots, peas, beans)

·        1 cup Canned Coconut Milk (full-fat)

·        1 1/2 cups Water

·        Salt to taste

·        Chopped fresh Cilantro for garnish (optional)

Instructions:

·        Heat ghee/oil in a pressure cooker or pot. Add cumin seeds, cardamom, cloves, and bay leaf. Let them splutter for a few seconds.

·        Add the chopped onion and cook until translucent.

·        Add ginger-garlic paste and green chili (if using) and sauté for 30 seconds.

·        Add the chopped vegetables and cook for another minute.

·        Pour in the coconut milk, water, and salt. Bring to a boil.

·        Gently stir in the soaked basmati rice.

·        Close the pressure cooker lid and cook for 2 whistles on medium heat. If using a pot, simmer for 15-20 minutes or until the rice is cooked and fluffy.

·  Once cooked, fluff the rice with a fork and garnish with chopped cilantro (optional).

Tips:

·    For a richer flavor, sauté cashews or almonds in the ghee before adding the onions.

·       Feel free to adjust the vegetables based on your preference. Bell peppers, corn, or cauliflower are excellent additions.
