Ingredients (serves 4):

  • 1 cup basmati rice, rinsed and soaked for 30 minutes
  • 1 tablespoon vegetable oil
  • 1 teaspoon cumin seeds
  • 1 bay leaf
  • 2 cloves
  • 1 medium onion, finely chopped
  • 1 inch ginger, grated
  • 2 green chilies, slit (adjust for spice preference)
  • 1 cup mixed vegetables (peas, carrots, corn kernels, etc.)
  • 1 tomato, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala powder
  • Salt to taste
  • 1 cup grated cheddar cheese (or your favorite vegan cheese)
  • 1/4 cup chopped fresh coriander leaves (for garnish)



Cooking Process:

1.  Heat oil in a pressure cooker or pot with a tight-fitting lid. Add cumin seeds, bay leaf, and cloves. Once they splutter, add the onion and ginger. Sauté until the onions become translucent.

2. Add green chilies and cook for a minute. Add the mixed vegetables and cook for another 2-3 minutes.

3. Stir in the chopped tomato and cook until mushy. Add turmeric powder, coriander powder, garam masala, and salt. Mix well and cook for a further minute.

4.   Add the soaked and drained rice. Stir to coat the rice with the masala.

5.   Pour in 2 cups of water (or vegetable stock for extra flavor). Bring to a boil, then reduce heat to low, cover the pot tightly, and cook for 10-12 minutes (or until the rice is cooked through) in a pressure cooker, or 18-20 minutes on the stovetop.

6. Once the rice is cooked and fluffy, turn off the heat. Let the pressure release naturally for 5 minutes before opening the lid.

7.   Gently fold in the grated cheese and chopped coriander leaves. Cover the pot and let it sit for 2-3 minutes to allow the cheese to melt and infuse its flavor.

8.   Fluff the rice with a fork and serve hot.


Tips:

  • For a richer flavor, use ghee instead of vegetable oil.
  • Experiment with different vegetables like broccoli, cauliflower, or bell peppers.
  • You can adjust the amount of cheese depending on your preference.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently in a pan with a splash of water or milk.
