soaked for 30 minutes
- 1 tablespoon vegetable oil

- 2 cloves

- 1 inch ginger, grated
- 2 green chilies, slit (adjust
for spice preference)
- 1 cup mixed vegetables (peas,
carrots, corn kernels, etc.)
- 1 tomato, finely chopped
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala powder
- Salt to taste
- 1 cup grated cheddar cheese (or
your favorite vegan cheese)
- 1/4 cup chopped fresh coriander leaves (for garnish)

Cooking
Process:
1. Heat oil in a pressure cooker or pot
with a tight-fitting lid. Add cumin seeds, bay leaf, and cloves. Once they
splutter, add the onion and ginger. Sauté until the onions become translucent.
2. Add green chilies and cook for a
minute. Add the mixed vegetables and cook for another 2-3 minutes.

turn off the heat. Let the pressure release naturally for 5 minutes before
opening the lid.
