Ingredients (serves 4):      

·        Mustard oil: 2 tbsp         

·        Ghee: 1 tbsp (optional)       

·        Panch Phoron (Bengali five-spice mix): 1 tsp         

·        Bay leaf: 1         

·        Dry red chilies: 2 (broken)         

·        Ginger-garlic paste: 1 tbsp         

·        Turmeric powder: 1/2 tsp

·        Kashmiri red chili powder: 1/4 tsp (or to taste)        

·        Mustard paste: 2 tbsp ·        

·        Potatoes: 4 medium (peeled and cut into wedges)         

·        Salt to taste ·        

·        Sugar (optional): a pinch ·        

·        Chopped coriander leaves: for garnish

Processing:

·        Heat mustard oil (and ghee, if using) in a pan. Add panch phoron, bay leaf, and dry red chilies. Let them splutter for a few seconds.   

·        Add ginger-garlic paste and saute until fragrant.

·        Add turmeric powder, red chili powder, and mustard paste. Cook for a minute, stirring continuously.

·        Add the potatoes, salt, and a little water (around 1/4 cup).

·        Cover the pan and simmer on medium heat for 15-20 minutes, or until the potatoes are tender.

·        Once cooked, mash some potatoes slightly to thicken the gravy. Add sugar (optional) for a hint of sweetness.

·        Garnish with chopped coriander leaves and serve hot with rice or dal.
