·        1 chopped green chili (optional)

·        1 tbsp chopped coriander leaves

·        1/2 tsp garam masala powder

·        Salt to taste

·        Corn flour/semolina for coating (optional)

For the Malai Gravy:

·        4 tbsp ghee or vegetable oil

·        1 bay leaf

·        2 cloves

·        2 black cardamom pods

·        1 inch cinnamon stick

·        1 large onion, finely chopped

·        4 large tomatoes, puréed

·        1 tbsp ginger-garlic paste

·        1 tsp coriander powder

·        1/2 tsp turmeric powder

·        1 tsp red chili powder (adjust to spice preference)

·        1/2 tsp cumin powder

·        1/2 cup heavy cream or full-fat milk

·        Salt to taste

·        Chopped coriander leaves for garnish (optional)



Processing in Detail:

·        Make the Kofta: In a large bowl, combine crumbled chhena, mashed potato, green peas, cashews, green chili (if using), coriander leaves, garam masala, and salt. Mix well and knead into a soft dough. If the dough feels too moist, add a little corn flour or semolina to bind.

·        Shape the Kofta: Grease your palms and roll the dough into small balls. Gently flatten them into slightly oval shapes.

·        Cook the Kofta: You can choose between shallow frying or pan-frying. For shallow frying, heat enough oil in a pan. Deep fry the kofta in batches until golden brown. ·        Add the Tomato Purée: Add the puréed tomatoes and cook on medium heat until the gravy thickens and the oil starts to separate.

·        Spice it Up: Add ginger-garlic paste, coriander powder, turmeric powder, red chili powder, and cumin powder. Mix well and cook for a minute.

·        Simmering the Gravy: Add water (around 1/2 cup) to adjust the consistency of the gravy. Season with salt. Cover the pan and simmer for 10-15 minutes, allowing the flavors to meld.

·        Creamy Touch: Add heavy cream or milk and gently simmer for another 2-3 minutes. Avoid boiling after adding cream.

·        Assemble and Serve: Gently add the cooked kofta to the simmering gravy. Garnish with chopped coriander leaves (optional). Serve hot with roti, naan, or steamed rice.
