Aloo Dum

Ingredients:

Ø 6 medium potatoes, peeled and quartered

Ø 1 cup thick yogurt

Ø 1 teaspoon turmeric powder

Ø 1 teaspoon coriander powder

Ø 1 teaspoon garam masala

Ø 1 teaspoon red chili powder

Ø 1/2 teaspoon cumin seeds

Ø 1/2 teaspoon mustard seeds

Ø 1/2 teaspoon fenugreek seeds

Ø 1/2 teaspoon hing

Ø 1 bay leaf

Ø 1-inch piece of ginger, peeled and grated

Ø 2 cloves garlic, minced

Ø 1 medium onion, finely chopped

Ø 2 tablespoons oil

Ø Salt to taste



Instructions:

Ø In a bowl, combine the yogurt, turmeric powder, coriander powder, garam masala, red chili powder, cumin seeds, mustard seeds, fenugreek seeds, hing, bay leaf, ginger, and garlic. Mix well.

Ø Add the potatoes to the bowl and mix to coat.

Ø Heat the oil in a large pot or Dutch oven over medium heat. Add the onion and cook until softened about 5 minutes.

Ø Add the potato mixture and cook for 5 minutes, stirring occasionally.

Ø Add 1 cup of water and salt to taste. Bring to a boil, then reduce heat to low and simmer for 20 minutes, or until the potatoes are tender.

Ø Serve hot with rice or roti.
