Origins and Traditions:

Black Urad Dal Pulao, also known as Ulundu Sadam, is a staple dish in South Indian cuisine. Traditionally enjoyed during festivals and everyday meals, it's known for its simplicity and versatility. Urad dal, a black lentil, is a common ingredient in Indian cooking, valued for its high protein content and earthy flavor.

Perfect for any Occasion:

This protein-packed pulao is perfect for a satisfying lunch, a light dinner, or even a potluck dish. The simplicity of the recipe allows for customization – add chopped vegetables, nuts, or spices to suit your preference.

Ingredients:

·         ½ cup black urad dal, rinsed and soaked for at least 6 hours

·         ¾ cup basmati rice, rinsed and soaked for 10 minutes

·         1 tbsp. ghee (or vegetable oil for a vegan option)

·         1 tsp fennel seeds

·         2 cloves

·         2 green cardamoms

·         1-inch cinnamon stick

·         1 black stone flower (optional)

·         2 green chilies, slit lengthwise

·         ¼ cup chopped fresh mint

·         ¼ cup chopped fresh cilantro

·         1.5 tsp salt (adjust to taste)

·         1 cup water

·         1 cup thin coconut milk (optional)

Cooking Process:

1.    Temper the Tadka: Heat ghee/oil in a pressure cooker or pot. Add fennel seeds, cloves, cardamom, cinnamon, and black stone flower (if using). Let them sizzle for a few seconds until fragrant.

2.    Sauté the Urad Dal: Add the soaked urad dal and sauté for 2-3 minutes until slightly browned.

3.    Incorporate the Rice and Aromatics: Add the rinsed basmati rice, green chilies, salt, and stir to combine.

4.    Water and Coconut Milk: Pour in the water and coconut milk (if using). Bring to a boil.

5.    Pressure Cook or Simmer: Close the pressure cooker and cook for 3-4 whistles, or simmer in a pot on low heat for 20-25 minutes, or until the rice is cooked through and fluffy.

6.    Garnish and Enjoy: Once cooked, fluff the rice with a fork. Garnish with fresh mint and cilantro before serving.

Tips for a Verdant Kitchen

·         Soak it Up: Soaking the urad dal not only reduces cooking time but also improves digestibility.
